Ingredients
- 1 ) 1 pound dates (cut in half)
- 2 ) 1 pound pecans halves
- 3 ) 1 cup flour
- 4 ) 1/2 teaspoon salt
- 5 ) 1 teaspoon vanilla
- 6 ) 2 rounded teaspoons baking powder
- 7 ) 1 cup sugar
- 8 ) 4 eggs lightly beaten
- 9 ) 1/2 pound candied cherries (diced)
- 10 ) 1/2 pound candied pineapple (diced)
Preparation
Step 1
Sift flour, baking powder, salt together. Mix with dates and nuts. Add eggs, sugar, vanilla, cherries and pineapple. Pour into 9 x 11 pan (sprayed with oil) Bake slow at 300 degrees for 1 hour and 20 minutes. Put pan of water on lower rack of oven so cake does not dry out.
