Sweet potato fries

Spice ideas for flavoring:

*3-4 T olive oil; dash salt; dash black pepper; add after baking: 1 T balsamic vinegar
*olive oil; dash salt; 1/4 tsp paprika; pinch of cayenne pepper (and try adding 2 T fresh thyme leaves)
*olive oil; sprinkle with cinnamon

3 average sweet potatoes= 1 lb
1lb = 4 cups grated
1 lb = 1 very generous cup pureed

Ingredients

  • 2-3 sweet potatoes, peeled and cut into 1/2" strips
  • 3-4 T olive oil (use much less!)
  • 1/2 t salt
  • 1/4 tsp grd black pepper
  • 1 T balsamic vinegar
  • Serve with cumin spiced ketchup; maple syrup and cinnamon spiked plain yogurt, or just plain maple syrup!

Preparation

Step 1

1. Preheat oven to 400*F.
2. Toss strips with olive oil and desired spices.
3. Arrange in single layer on baking sheets. Bake until edges are crisp and potatoes are cooked through.
*To get crisper fries- arrange sticks over mesh wire racked ontop baking sheet.
4. Bake ~25 minutes until desired texture is achieved; stirring halfway through cooking to bake and brown evenly.

-> Technique: Sprinkle potato slices with salt and let sit in large bowl ~20 minutes. Transfer to paper towels to absorb moisture. (method will help make fries crispier)
