Ingredients

  • Filling:
  • 1/2 cup butter
  • 1/2 cup finely chopped onion
  • 3/4 lb scallops
  • 2 Tbsp flour
  • salt and pepper
  • zest and juice of lemon
  • 1/2 tsp of thyme, dill and oregano
  • Puffs:
  • 1 cup water
  • 1 stick of butter
  • 1 Cup flour
  • 4 whole eggs

Step 1

Puffs: (makes 50)

In a saucepan bring the water and butter to a boil. Stir in the flour and take off the heat. Transfer to a food processor fitted with a metal blade. With the motor running thru the slot on top add the eggs. Use spoons and place on a greased cookie sheet in small mounds (not too big). Bake in a preheated oven at 400 for 30mins

Filling:
Saute onion in butter. Add scallops sauté for 3 mins remove from the pan. Add flour, herbs, zest and juice. Season with salt and pepper. Stir in scallops and cook additional 5 mins. Slice baked puffs in half and stuff with a sauce and then scallop.

Bake stuffed puffs 8 mins at 325.
