Oatmeal Date Cookies

Ingredients

  • 1 c. shortening
  • 1 c. brown sugar
  • 1/2 c. milk
  • 3 c. oats
  • 2 1/2 c. flour
  • 1 tsp. baking powder
  • 3/4 tsp. salt

Preparation

Step 1

Cream together: 1 cup shortening and 1 cup brown sugar. Add alternately and beat together - 1/2 cup milk and 3 cups oats, 2 1/2 cups flour, 1 teaspoon baking powder and 3/4 teaspoon salt. Roll out thin and cut rounds with cookie cutter. Bake at 375 about 10-12 minutes. Cool and make “sandwiches” with date filling. Filling: Boil until mushy: 1 lbs. pitted dates, 1 cup brown sugar. And 1 cup water. Cool before spreading on cookies.
