Roasted Asparagus

Ingredients

  • 2 lb. med. thick asparagus, drained
  • 4 tbsp. olive oil, divided
  • 1/4 c. large capers drained

Preparation

Step 1

Heat oven to 500 degrees. Drizzle 2 tablespoon of oil, on to a jelly roll then add asparagus. Toss to cool with oil. Sprinkle with salt and pepper. Roast until fork tender (about 8 minutes). Transfer to a warm platter. In small skillet oven high heat, fry capers (& onion –optional) in remaining oil until crisp about 2 minutes. Serve over asparagus.
