Ingredients
- Cake:
- 5 eggs, beaten
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 3 cups self rising flour
- 1 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 1 cup raisins
- 3 cups finely grated carrots
- 1/2 cup crushed pineapple
- 1/2 cup sweetened flaked coconut
- 1 cup chopped pecans
- Icing:
- 1 1lb package powdered sugar
- 1 package cream cheese
- 1 1/2 cups butter
- 2 tsp vanilla
- 1 cup chopped pecans
- 1 cup crushed pineapple, drained
- 1 cup sweetened flaked coconut

Preparation
Step 1
Preheat oven to 350F.
Cake:
1. Blend eggs, sugar, and oil.
2. Sift flour, soda, cinnamon, and salt.
3. Fold in raisins, carrots, coconut, pecans, and pineapple.
4. Pour into 2 9" pans.
5. Bake for 40 minutes.
Icing:
1. Blend first 4 ingredients.
2. stir in remaining ingredients.
3. Spread between layers and on top of cake.
