Goat Cheese Stuffed Pork Tenderloin with Red Wine Balsamic Cherry Sauce

Ingredients
- Meat:
- 2 tenderloins
- 3/4 cup goat cheese
- zest of 2 lemons
- 1 1/2 tbsp fresh basil, chopped
- 1 tbsp olive oil + 1 tbsp
- 1 tsp pepper
- Sauce:
- 1/2 cup red wine
- 1/2 cup fresh cherries, pits removed and chopped
- 1/2 tbsp balsamic vinegar

Preparation
Step 1
Meat:
1. Preheat oven to 395F.
2. Butterfly pork, season.
3. Cover with cling wrap and pound until flat.
4. Mix goat cheese, lemon zest, and basil with 1 tbsp oil and pepper.
5. Remove wrap from pork and spoon mixture over center.
6. Roll up to make an even compact roll.
7. Use string to tie.
8. Rub oil on pork and season with salt and pepper.
9. Heat ovenproof skillet over medium-high with remaining oil.
10. Brown pork.
11. Place in oven and cook 12 minutes.
12. Place on plate and cover with foil.
13. Slice 3/4 inch slices, drizzle with sauce and serve.
Slice:
1. Place same skillet over medium-high,
2. Add wine and scrape pan.
3. Add half of cherries and vinegar, cook 5 miniutes.
4. Add remaining cherries and cook 1 minute. Should be slightly reduced and cherries warm.
