Dry Asian Pork Tenderloin with Grilled Fruit

Ingredients

  • pork tenderloin
  • 2 tbsp cumin
  • 2 tbsp coriander
  • dried chilies
  • 2 tbsp salt
  • 2 tbsp olive oil
  • 1/4 cup maple syrup
  • 1 " sliced rings pineapple
  • 3 peaches, halved
  • 1 tbsp butter

Preparation

Step 1

1. Preheat oven to 400F.
2. Sear pork on all sides 2-3 minutes.
3. Remove to plate.
4. Rub with syrup and pat 1 tbsp dry rub per tenderloin onto all sides.
5. Return to skillet.
6. Bake 18-20 min.
7. Let rest 15 minutes.
8. Grill fruit until slightly tender, brushing with butter.
