Ingredients
- 3 pints (6 c.) cherry tomatoes
- 3/4 lbs. good feta cheese or mozzarella pieces
- 1 small red onion, chopped
- 1/4 c. good olive oil
- 1 tsp. kosher salt
- 1/2 freshly ground black pepper
- 2 tbsp. minced fresh basil leaves
- 2 tbsp. minced fresh parsley
Preparation
Step 1
Cut the cherry tomatoes in half and place in a large bowl. Dice the feta or mozzarella. Add the cheese to the tomatoes and then add the onion, vinegar, olive oil, salt, pepper, basil and parsley. Toss carefully and salt, to taste. Serve chilled or at room temperature.
