Paprika Shrimp with Orange & Avocado Salsa

Ingredients
- 2 navel oranges
- 2 T olive oil
- Kosher salt
- 1 avocado, cut into med dice
- 1/3 thinly sliced scallions
- 1 T lime juice
- 2 t paprika
- 1/2 t ground cumin
- 1 t hot sauce
- 1 1/4 lb. large shrimp

Preparation
Step 1
Position oven 4" from broiler & heat broiler
Segment oranges and cut in half and place in small bowl. Add 2 T olive oil, 3/4 t salt, avocado, scallions & lime juice; toss gently
In med bowl, combine remaining 3 T olive oil, paprika, cumin, hot sauce, 1 t salt; stir well.
Add shrimp, tossing to coat
Arrange shrimp on foil lined rimmed baking sheet. Broil until shrimp are opaque & cooked thru @ 4 min. Can also be grilled.
Serve shrimp with salsa
