Black Bean Salad

Ingredients

  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1/2 c. red onion, diced
  • 1- 16 oz. can corn, drained
  • 1 clove garlic, minced
  • tortilla chips; optional
  • 1 tsp. cilantro
  • 1/4 c. olive oil
  • 4 tbsp. red wine vinegar
  • 1 tsp. lime juice
  • freshly ground pepper
  • 1- 15 oz. can Bush’s black beans, drained

Preparation

Step 1

Seed and dice all bell peppers. In a salad bowl, combine peppers, onion, corn, garlic and cilantro. Toss to mix. Add olive oil, vinegar, lime juice and salt and pepper to taste. Toss again. Add beans, toss well.
