Ale Braised Cheese Dip with Onions & Maple Bacon

Ingredients
- 2 medium yellow onions
- 2 tsp oil
- 2 cups grated old cheddar cheese
- 1 tbsp. flour
- 1/4 tsp cayenne
- 1 1/2 cup Ale
- 1 tsp Dijon
- 1/2 cup white cheese curds, chopped
- 4 smoked bacon slices, cooked and crumbled
- 2 green onions, finely chopped
- 2 tbsp. maple syrup

Step 1
Slice onions. Heat oil in cast iron pan on medium heat, add onions, stir to coat and cover. Cook for 15 min, stirring occasionally until brown.
In large bowl combine cheddar, flour and cayenne.
Add ale and Dijon to onion in skillet, stirring to heat through. Stir in half the cheese mixture gradually into warmed ale, stir until cheese is melted but not boiling. Add remaining cheese and curds, continue stirring until melted with a few visible curds remaining.
Remove from heat.
To serve sprinkle with bacon and green onion, drizzle with maple syrup.
Place skillet on wooden board and serve with bread, asparagus, broccoli and peppers for dipping.
