Ingredients
- 2 chicken breasts
- 2 teaspoons olive oil
- salt & freshly ground pepper to taste
- 1 1/2 cups green onions, finely chopped, divided
- 1 teaspoon minced garlic
- 1 tomato, diced
- 3 - 14.5oz cans chicken broth
- 1/8 teaspoon cumin
- 1 teaspoon coarse kosher salt
- 2 avocados, diced
- 1/2 cup cilantro, finely chopped
- lime wedges
Preparation
Step 1
Season and cook chicken. (You can grill or bake, I boiled it). Shred chicken.
Heat oil in bottom of large pan. Add 1 cup green onions, saute for 2-3 minutes. Add garlic and saute for 1 more minute. Add tomatoes (I used 1 can diced tomatoes), chicken broth, cumin and salt. Cover and heat for 10-15 minutes. Add chicken to broth mixture and serve. Have individuals add desired avacado, cilantro, green onion and lime as desired.
