Susie’s Tortilla Soup

Ingredients

  • Garnish:
  • 2 1/2 tbsp. canola oil
  • 1 medium yellow onion, chopped
  • 2 1/2 cloves garlic, minced
  • 1 1/4 tbsp. chili powder
  • 1 1/4 tbsp. cumin
  • 3/4 tbsp. dried oregano
  • 7 1/2 c. chicken broth
  • 1 tsp. pepper
  • 2 lbs. cooked chicken breast, shredded
  • 2 c. corn
  • 1 can S&W chopped tomatoes (14 oz.)
  • fresh cilantro
  • cheddar cheese
  • grated avocado slices
  • squeeze of fresh lime juice
  • opt. corn tortillas
  • cut into strips & deep fried sour cream

Preparation

Step 1

In large soup pot sauté onion in oil over medium heat until tender. Add garlic, chili powder, cumin & oregano, sauté about 1 minute. Add broth, pepper & salt to taste & bring to a boil. Add chicken, corn & tomatoes and let simmer about 30 minutes. Ladle into bowls, garnish with cilantro, cheese, avocado, tortilla strips & sour cream. Squeeze of lime adds a nice touch.
