Beef Stuffed Tomaotes

Ingredients

  • 4 large ripe tomatoes
  • 1/2 pound ground beef
  • 1 small clove garlic, minced
  • 2 tablespoons snipped parsley
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon dried oregano, crushed
  • 1/4 teaspoon dried thyme, crushed
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup soft bread crumbs
  • 1 tablespoon butter or margarine, melted

Step 1

Cut tops from tomatoes. Scoop out centers, chop center portion and set aside. Invert tomato shells to drain. In skillet, cook beef and garlic till beef is browned. Remove from heat, Drain off excess fat. Stir in parsley, parmesan cheese, oregano, thyme, salt, pepper and chopped tomato. Sprinkle inside of tomato shells with a little salt, place in shallow baking dish. Spoon in ground beef mixture. Combine bread crumbs and the melted butter or margarine, sprinkle over filling. Bake in 375 degree oven for 20 to 25 minutes.
