tsp. baking powder
heaping cup of vegetable shortening
cup of warm water
Mix dry ingredients. Work in shortening with your hands, then pour in the water all at once. Mix well and knead for 2-3 minutes. Dough will be moist and manageable (a little drier than biscuit dough). Coat with a little shortening and put into plastic bag for 20 minutes until dough is soft. Take a small piece (size of a ping pong ball). Roll in hands until smooth, leave the rest in the bag while rolling. Using tips of your fingers, flatten each ball. Slightly roll out with rolling pin. Heat on the hot griddle. Cook like pancakes. Once flipped twice, press down with spatula for 30 seconds. Cool on dry clean towel and then use for your favorite tacos, enchiladas, etc.
