PB ‘n Chocolate Bread Pudding Bonanza

Ingredients

  • 3 Slices light bread
  • 1 Cup light vanilla soymilk
  • 1/3 C. fat-free egg substitute
  • 2 T. reduced-fat peanut butter
  • 2 T. semi-sweet mini chocolate chips
  • 2 T. brown sugar

Preparation

Step 1

Preheat oven to 350 degrees.

Place toasted bread cubes into a 1-quart baking dish sprayed with nonstick spray. Evenly sprinkle with chocolate chips.

In a blender, combine soymilk, egg, peanut butter, and sugar. Process at medium speed until smooth. Pour mixture over bread cubes, making sure all bread cubes are covered. Let stand for 5 minutes.

Bake in oven for 45-50 minutes, until firm. Best served warm.
