Enchilada Casserole

Ingredients

  • 1 dozen corn tortillas
  • 2 medium chopped onions
  • 1 lb. grated sharp cheese
  • 1 small can sliced black olives
  • 1 tbsp. chili powder
  • 1 lb. ground beef
  • 1 large can enchilada sauce

Preparation

Step 1

Brown beef. Put 4 tortillas on bottom of 9 x 13 dish. Combine new onions, cheese, chili powder, olives and beef. Place 1/3 of this over tortillas. Dilute sauce by 1/3 with water. Pour 1/3 sauce over meat mixture. Repeat layers (tortillas, meat mix and sauce) until all is used. Top with more grated cheese. Bake at 275 degrees for 1 1/2 hours. Cut in squares.
