Ham & Cheese Fusilli

Macaroni and cheese is a family comfort food, and by incorporating leftover ham it becomes a tasty dish that your fmaily will continue to enjoy all while you use up leftovers.

Ingredients

  • 1 pkg (450g) fusilli or rotini pasta
  • 2 tbsp (25mL) butter
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 2 tbsp (25mL) all purpose flour
  • 2 tsp (10mL)dried oregano leaves
  • 2 cups (500mL) 1% or 2% milk
  • 2 cups (500mL) julienned leftover ham
  • 1.5 cups (375mL) old cheddar cheese, shredded
  • Salt and pepper (optional)
  • 2 tbsp (25mL) chopped fresh parsley or basil

Preparation

Step 1

1. In a large pot of boiling salted water, cook pasta for about 8 mins or until tender but firm. Drain well and return to pot.

2. In a large saucepan, melt butter over medium heat and cook onion and garlic for 3 mins or until softened. Stir in flour and oregano and cook, stirring for 1 min. Whisk in milk and cook, whisking for about 5 mins or until starting to thicken. Remove from heat and stir in ham and cheese. Stir until cheese is melted. Pour over pasta and stir to combine well. Season with salt and pepper to taste if desired. Sprinkle with parsley to serve if desired.
