Savoury French Toast with Sheep in the Meadow Cheese

This comforting sandwich is a take on the French Croque Monsieur and Italian Mozzarella in Carrozza, but by using all locally produced ingredients we’ve made it a true Ontario dish. Should you need to look farther afield for the cheese two substitutions that would work nicely are Fleur de Maquis from Corsica, or a full-flavoured Taleggio from Lombardia.

Ingredients

  • 3 large eggs
  • 2 tbsp (30 mL) milk
  • Salt and pepper to taste
  • 1 loaf good-quality raisin bread, unsliced
  • 2 tbsp (30 mL) honey mustard
  • 8 oz (250 g) smoked ham, shaved
  • 5 oz (150 g) Sheep in the Meadow cheese, thinly sliced
  • 2 tbsp (30 mL) unsalted butter

Preparation

Step 1

1. In a square baking dish, lightly beat together eggs, milk, salt and pepper to taste.

2. From the loaf of raisin bread cut 8 slices ¾ inch (2 cm) thick.

3. Spread 4 slices with the honey mustard. Top each with ham and cheese. Top with the second slice of bread. Press down lightly to enclose well.

4. Dip the 4 sandwiches in egg mixture to coat each side, making sure all the egg is absorbed.

5. In a large nonstick fry pan heat half the butter over medium-low heat, add sandwiches and cook on 1 side until golden, about 5 minutes. Flip sandwiches over, add remaining butter and cook until golden, about 5 minutes.

6. Slice in half and serve warm.
