Butterscotch Refrigerator Cookies

Butterscotch refrigerator cookies are easy to make and very tasty. Try this recipe, it will become one of your favorites.
Ingredients
- 1 cup butterscotch-flavored baking chips
- 2 3/4 cups all-purpose flour
- 1 cup Land O Lakes® Butter, softened
- 1/2 cup sugar
- 1/2 cup firmly packed brown sugar
- 1 Land O Lakes® All-Natural Egg
- 1/2 teaspoon baking soda
- 1/2 cup chopped pecans

Step 1
Melt 3-5 minutes butterscotch chips in 1-quart saucepan over low heat, stirring constantly, until melted.
Place butterscotch mixture in large bowl; add all remaining ingredients except pecans. Beat at low speed, scraping bowl often, until well mixed. Stir in pecans.
Divide dough in half. Shape each half into 8x1 1/2-inch roll. Wrap in plastic food wrap. Refrigerate 2 hours until firm.
Heat oven to 375°Fahrenheit. Cut rolls into 1/4-inch slices with sharp knife. Place 1-inch apart onto ungreased cookie sheets. Bake 7-9 minutes or until set. Cool 1 minute on cookie sheets; remove to cooling rack.
