FISH TACOS WITH MANDARIN ORANGE SALSA

Ingredients

  • Salsa:
  • 1-11 oz can mandarin oranges, drained
  • 2 tbs chopped red pepper
  • 1 tbs chopped red opinion
  • 2 tbs chopped cilantro
  • 1/2 seeded, deveined jalapeño pepper, minced
  • 1 clove garlic minced
  • Dash of salt
  • Squirts of lime
  • Tacos
  • 2-6 oz fish filets
  • 2 tsp seasoning of your choice or blackening powder. (Suggestions: 1 tsp smoked paprika, 1/2 tsp garlic powder, dash of salt or 1 tbs lime juice sprinkled on fish, then sprinkle with 1 tsp cumin and 1/2 tsp chili powder)
  • 4 small corn tortillas
  • 1 lime quartered

Preparation

Step 1

Mix all salsa ingredients together, set aside.
Season fish, grill, broil or pan sauté as desired until done
Assemble tacos - place 1/2 fish filet either whole or flaked in corn tortilla, top with salsa. Can add lshredded lettuce if desired.
