Sleeping Dog Tavern’s World Famous White Chili

Sleeping Dog Tavern is a great little place in Santa Fe, NM. They have the absolute best white chili, containing green chili, chicken and all things good. Can be really spicy hot, depending on the heat of the chilies, but the sour cream cools it down. I use less beans and add some diced carrots and potatoes to make it more of a stew. Canned green chilies don't have the same effect as the fresh roasted ones, but are ok - get Hatch green chilies.
Ingredients
- 48 oz. Cooked or Canned Great Northern Beans
- 4 T. Vegetable Oil
- 1 Large Yellow Onion
- 4 Garlic Cloves
- 1 T. Ground Cumin
- 1 T. Ground Coriander
- 1 T. Mexican Oregano
- 1/2 tsp. Ground Clove
- 1/2 tsp. Cayenne Pepper
- 1/2 tsp. White Pepper
- 1 tsp. Salt
- 8 Roasted New Mexico Green Chiles (Hatch), chopped
- 1 Qt. Chicken Broth
- 3 Cups Water
- 1- 1 1/2 Pounds Boneless Skinless Chicken Breast
- 1/2 Bunch Chopped Cilantro
- 3 Cups Shredded White Cheddar or Jack Cheese
Preparation
Step 1
Heat oil in large stock pot and sauté onions with garlic until translucent. Add spices and green chile, sauté for 2 minutes. Grill chicken, chop and add to pot with beans, chicken broth, and water. Simmer 15 minutes. Add cilantro and 2 cups of shredded cheese, simmer 5 more minutes.
Garnish with shredded cheese, sour cream, and chopped cilantro.
