Ingredients

  • 1 packet of Duncan Hines® Frosting Creations™ Caramel Flavor Mix
  • 1 can of Frosting Creations™ Frosting Starter
  • 1 Duncan Hines Moist Deluxe Classic Yellow Cake mix
  • 3 eggs
  • 1/3 cup vegetable oil
  • 3/4 cup water
  • 1/2 cup orange juice
  • 1 can of sweet potatoes in light syrup (15 oz.)
  • 1 tablespoon butter
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon of grated orange zest

Preparation

Step 1

1. Cupcake:
2. 1.Preheat oven to 350 degree. Line cupcake baking pan with paper cupcake holders.
3. 2.Drain sweet potatoes and slightly rinse with water to get rid of extra sugar. Mash sweet potatoes in a bowl and add cinnamon and orange zest. Add 1 tablespoon butter. Beat for 1-2 minutes on medium speed with a mixer.
4. 3.Prepare Duncan Hines cake mix as directed mixing the water with the orange juice. Add the sweet potato mixture into the prepared batter and fold
5. 4. Fill each cup ¾ of the way to the top.
6. 5.Bake as directed on cake mix box. Allow cupcakes to cool completely before frosting.
7. Frosting
8. Pour pack of Duncan Hines® Frosting Creations™ Caramel Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended. Frost cupcakes using an offset spatula or with a piping bag with a star tip. Top with colorful sprinkles.
