Goat Cheese Appetizer

Ingredients

  • 2 cups fresh spinach leaves
  • 2 cups fresh basil leaves
  • 2 tsp minced garlic
  • 1/2 cup olive oil
  • 1 1/2 cups parmesan cheese (fresh)
  • 2 packages cream cheese
  • 2 packages plain goat cheese
  • 1/2 cup pine nuts
  • 1/2 cup sundried tomatoes chopped
  • 1 baguette

Preparation

Step 1

put spinach, basil, garlic and olive oil in a food processor, and slowly add 1 1/2 cups of grated parmesan cheese.

in separate bowl mix the cream cheese and goats cheese

Take a plastic bowl and line with seran wrap. Put a layer of basil mixture, then layer of cheese mixture, then layer of sundried tomatoes and pin nuts. Repeat the layers. Cover and put in refrigerator for at least 2 hours.

Serve with a fresh baguette.
