Pumpkin Tea Bread

Makes 2 loaves, 9x5x3 or 4 mini loaves

Ingredients

  • 3 1/2 cups sifted all purpose flour
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1 can (1lb) pumpkin
  • 2/3 cup water
  • 2/3 cup soft shortening
  • 2 2/3 cup sugar
  • 2 eggs

Preparation

Step 1

Grease loaf pans; dust with flour.

Sift flour, baking soda, baking powder, salt, cinnamon and pumpkin pie spice; reserve.

combine shortening, sugar and eggs in a large mixing bowl. beat at high speed for 3 mins.

Stir in flour mixture alternately with pumpkin mixture, beating after each addition until batter is smooth; pour batter into prepared pans.

Cool for five mins; turn out onto rack; cool the loaves completely.

Freezes well!
