Pork Chops with Apples and Onions

Ingredients

  • 4-4 oz. boneless center cut pork chops, trimmed
  • salt & pepper
  • garlic powder
  • 1 tsp olive oil
  • 3 medium Gala apples, peeled and sliced
  • 1 medium onion, sliced
  • 1 clove garlic, minced
  • 1 C chicken broth
  • 1 tsp dried thyme
  • 1 tsp dijon mustarad
  • 1 T apple cider vinegar
  • 2 tsp cornstarch

Preparation

Step 1

Season pork chops with salt, pepper and garlic powder. Heat large nonstick skillet with 1 tsp olive oil on med/high heat until oil glistens. Add chops to pan and sear on each side until golden brown, about 4 minutes per side.

Remove chops to dish (they will not be done) and set aside.

Add apples and onions to hot pan. Stir around and cook for about 5 minutes, or until they both begin to soften. Add garlic and cook another minute.

Add in chicken broth, mustard, thyme, and salt/pepper to taste. Bring to boil, then reduce to simmer. Add pork chops and any accumulated juices to the sauce. Cook til done (145 degrees F).

Bring sauce to gentle boil. Combine vinegar and cornstarch and add to sauce; stir until thickened.
