LADYFINGERS ( Dorothy Tite )

Ingredients

  • 1 ) 3 eggs,separated
  • 2 ) 2/3 cup powdered sugar, divided
  • 3 ) 1/2 cup cake flour, sifted
  • 4 ) 1/8 teaspoon salt
  • 5 ) 1/2 teaspoon vanilla

Preparation

Step 1

Mix flour, salt and 1/3 cup powdered sugar and sift together 3 times. Beat egg whites until stiff and gradually add remaining 1/3 cup sugar. Fold in vanilla and add beaten egg yolks until thick and very light colored. Carefully fold in the flour and sugar mixture adding 3 tablespoons at a time. Mix well. Press through a pastry tube on ungreased paper lined pans making strips 4 x 3/4 inches or bake in ladyfinger pans. Dust with add'l powdered sugar and bake at 350 for 10-12 minutes. Batter may be dropped from teaspoon to make round cookies instead. Makes 24 cookies.
