  • 1/2 cup light vanilla ice cream (like Dreyer's/Edy's Slow Churned Light)
  • 1/4 cup Fiber One Caramel Delight cereal

Preparation

Step 1


Place a scoop of ice cream on a sheet of plastic wrap, and wrap it up completely. Use your hands to form the plastic-wrapped ice cream into a smooth ball. Freeze for 15 to 30 minutes, until extra-firm.

Meanwhile, place cereal in a resealable bag and crush it through the bag with a rolling pin or a can of soup. (Progresso cans work great!) Transfer crushed cereal to a bowl and set aside.

Once firm, remove ice cream from the freezer and unwrap. Roll it in the crushed cereal until thoroughly coated. Mmmm!
