Grilled Vegetables with Feta

Ingredients

  • 1/4 cup balsamic vinegar
  • 2 Tbs. Dijon mustard
  • 2 Tbs. olive oil
  • 1 tsp. freshly ground pepper
  • 1/2 tsp. salt
  • 3 garlic cloves, minced
  • 2 medium zucchini halved lengthwise (about 1 pound)
  • 1 red bell pepper, quartered
  • 1 yellow bell pepper, quartered
  • 4 (1/2") slices Vadalia onion
  • 4 (4") portobello caps
  • 4 cups hot cooked basmati rice
  • 1/2 cup (2 oz.) feta, crumbled

Preparation

Step 1

1. Prepare grill
2. Wisk vinaigrette ingredients together
3. Prepare vegetables. Marinate zucchini and peppers in bowl. Brush marinade over onion and mushroom caps. Grill 2 1/2 minutes per side, or until brown and tender.
4. Cut vegetables in half, and serve over rice, topping with cheese.
