Ingredients

  • 1 whole wheat pita,
  • 1/2 onion chopped,
  • green, red, or yellow peppers, cut into pieces,
  • veggies of choice chopped,
  • 1 tsp olive oil,
  • 1 oz. low fat or soy cheese,
  • 2 tsp. of light sour cream,
  • 3-4 tsp. salsa.

Step 1

In small skillet saute onions, peppers, veggies of choice with olive oil at medium heat. Add meat of choice and cook for 7-8 minutes or until meat is completely cooked and set aside.

Divide pita in two so that you have two round parts.
Place one pita on a baking tray, spread salsa and sour cream, the veggie mixture, and cheese on pita and place the other pita on top. Cook in the oven at 375F until veggies warm, cheese is melted and pita is crispy (10-15 minutes).
