Ingredients
- 1 tbsp olive oil
- 1 small zucchini diced fine
- 1 medium onion, diced fine
- half yellow pepper, diced fine
- 2 cloves garlic, minced fine
- 1 can red kidney beans, drained, rinsed and mashed
- 1/2 c salsa
- 1/2 c cooked quinoa
- 1/2 c fine bread crumbs ?+
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/4 c chopped fresh cilantro

Preparation
Step 1
Heat oil in pan and saute zucchini, onion and pepper until slightly caramelized-approximately 15 minutes.
Add garlic and cook for 30 seconds more. Set aside.
In a large bowl, mix cooked vegetables and all other ingredients together. Form into patties and cook in a pan with a little bit of oil
Serve on a bun with mayo, tomato, lettuce and sliced avocado.
