Sandbakkelse (Swedish Butter Cookies)

Ingredients

  • 1/2 CUP BUTTER
  • 1/2 CUP GRANULATED SUGAR
  • 1 EGG YOLK
  • 1/2 TEASPOON ALMOST EXTRACT
  • 2 CUPS ALL PURPOSE FLOUR

Preparation

Step 1

In an electric mixer, place butter and sugar and beat until light and fluffy. Add egg yolk and extract and continue beating well. Stir in the flour. Make marble-size balls and place one in a sandbakkelse fluted shell(mini tart pans). With your thumb, press down dough to cover bottom and sides making a 1/8-inch thick shell.

Put the filled shells on a cookie sheet and bake in a preheated 375-degree oven for 8-10 minutes. Remove the cookie sheets, put on a wire rack to cool slightly. With the tip of a knife loosen the shell and turn out on wire rack to finish cooling.

Makes 4 dozen Sandbakkelse.
