Garlic Potato Chips

Ingredients

  • 2 teaspoons minced garlic
  • 1 Tablespoon olive oil
  • 2 unpeeled russet potatoes
  • 1/2 teaspoon salt

Preparation

Step 1

Heat garlic in a pan with the olive oil until golden, 2 minutes. Let cool, then strain the oil. Slice the potatoes into thin rounds with a mandolin; rinse with cold water and pat dry. Toss the potatoes with the garlic oil and salt. Working in batches, spread the potatoes on 2 baking sheets coated with cooking spray and bake at 400F until golden, 20 to 25 minutes. Let cool until crisp.
