Enchilada Meat Loaf

Ingredients

• 1 egg, slightly beaten
• 1 medium onion, chopped
• 1/4 C bottled salsa
• 2 T chili powder
• 3 cloves of garlic, minced
• 1/2 tsp. salt
• 1 # ground beef
• 1 8.5-oz. package corn muffin mix
• 2 oz. sharp cheddar cheese, sliced

Preparation

Step 1

Pre-heat oven to 350 degrees.

Combine egg, onion, `/4 C salsa, chili powder, garlic, and salt and mix. Add ground beef and mix well. Shape into a ball and place into a 9" pie plate. Flatten and set aside

Prepare corn muffin mix according to package,. Spread over the meat mixture. Bake about 50 minutes, or until meat thermometer reads 160 degrees.

Remove from oven. Halve cheese slices and arrange on top. Cover loosely, and let it stand 10 minutes before serving. Serve with additional salsa if desired.
