Hollandaise Sauce

  • 1/2 cup margarine or butter
  • 3 beaten egg yolks
  • 1 TBSP water
  • 1 TBSP lemon juice
  • Dash of white pepper

Preparation

Step 1

In a small sauce pan, heat the butter, water, lemon juice and pepper until butter is melted and hot.

Whisk in the egg yolks until smooth and thick. If sauce breaks (curdles, gets lumpy) or if you desire a thinner consistency, remove pan from heat and whisk in a TBSP of HOT tap water.
