Breasts - in Pineapple-Tequila Marinade

  • 2/3 cup unsweetened pineapple juice
  • 1/3 cup tequila
  • 2 Tbsp. packed brown sugar
  • 2 Tbsp. achiote paste
  • 2 Tbsp. ketchup
  • 1 Tbsp. fresh lime juice
  • 1 Tbsp. habanero hot sauce
  • 1 Tbsp. soy sauce
  • 2 garlic cloves, crushed through a press
  • 2 large whole boneless, skinless chicken breasts (3 lb. total)
  • salt and pepper

Preparation

Step 1

Prepare bbq grill to medium-high. Position the rack about 6" above the grill rack.

In a zip-lock stir together the pineapple juice, tequila, sugar, achiote paste, ketchup, lime juice, hot sauce, soy sauce, and garlic. Add the chicken breasts and marinate at room temperature for no= more than 30 minutes, turning once or twice.

When grill is ready, lay the breasts on the rack. Cover and grill, basting often with the marinade until it is used up. Turn breasts every 2 minutes and grill until done (about 8 minutes)

Transfer breasts to a cutting board and let them rest 3-4 minutes. Carve the breasts into thin slices. Season with salt and pepp3r and serve hot or warm.
