Beef Barley Soup

Ingredients
- 2 tsp. oil
- 1/2 lb. top round steak, finely diced
- 3 medium celery stalks, finely diced
- 2 medium carrots, finely diced
- 1 small onion, finely diced
- 8 oz. button mushrooms, diced
- 3 14.5 oz. cans fat-free reduced sodium beef broth
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- Bay leaf
- 1/2 cup uncooked barley

Preparation
Step 1
Add oil to a large soup pot and heat over high heat. Add beef and saute for 7-8 minutes: brown well. Stir in celery, carrots and onion and saute an additional 7-8 minutes or until vegetables begin to caramelize.
Add mushrooms and saute for 5 more minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 60 minutes-taste at 45 minutes. Remove bay leaf and serve.
