Weeknight Chicken Parmesan #3

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoons minced garlic
  • 2 cans (14.5 oz. each) Diced Tomatoes,; undrained
  • 1 can (14.5 oz.) Cut Green Beans,; drained
  • 4 thin-cut boneless, skinless chicken breast halves; (3-4 oz each)*
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon dried oregano or 1 Tbsp. fresh oregano
  • 1/2 cup finely crushed garlic croutons

Preparation

Step 1

1. Preheat oven to 400°F.

2. Heat oil in a medium saucepan. Add garlic; cook, stirring, until golden brown, about 1 minute.

3. Add tomatoes; bring to a boil. Reduce heat to medium-low and cook, uncovered, 5 to 10 minutes or until sauce thickens slightly.

4. Combine tomatoes and beans in a 13x9-inch baking dish. Arrange chicken on top. Sprinkle chicken with Parmesan and oregano. Bake, uncovered, 20 to 25 minutes until chicken is no longer pink inside. Sprinkle with crushed croutons. Serve with pasta, potatoes or rice, if desired.

*NOTE: If chicken breasts are very large, slice two large chicken breasts in half horizontally to about 1/2-inch thickness.
