Paul's Rotisserie Chicken

  • 2 Tsp. Horseradish Mustard
  • 4 cloves garlic, crushed
  • grated lemon peel
  • soy sauce

Preparation

Step 1

Mix horseradish, mustard and grated lemon peel together. Add soy sauce to make a paste. Paul said he's been adding more mustard and garlic, and less soy, to make more of a rub.

Place lemon inside chicken on skewer. Tuck legs under. Rotisserie for about 1/2 hour dry, with nothing on the chicken. Then start basting every 15 to 30 minutes.
