Sweet and Sour Brussels Sprouts

Ingredients

  • 1 lb fresh Brussels sprouts, trimmed and cut in half
  • 2 tbsp extra virgin olive oil
  • 2 tbsp maple syrup
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1/2 c cashew pieces, toasted in a 350 degree oven until golden
  • salt and pepper to taste

Preparation

Step 1

In a medium saucepan, cook Brussels sprouts in 2/3 c boiling water until crisp-tender, about 8 min. Drain. In a medium bowl, combine oil, syrup, vinegar, mustard. Add Brussels sprouts, cashews, salt and pepper; toss. Serves 4.
