Baked Mushrooms and Croutons

Ingredients

  • 4 tablespoons olive oil, plus more for the baking dish
  • 1 medium onion, chopped
  • 2 cups oysters mushrooms, chopped
  • 1/2 cup chopped fresh flat leaf parsley
  • 6 large eggs
  • 2 cups whole milk
  • kosher salt and black pepper
  • 1/2 pound day old sourdough bread, cut into 1-inch pieces (about 6 cups)
  • 1/2 pound Sharp cheddar, grated (2 cups)

Preparation

Step 1


Heat oven to 350° F. Oil an 8-inch square baking dish. Heat 3 tablespoons of the oil in a large skillet over medium-high heat and cook the onion for 5 minutes. Season with salt and pepper, Add Mushrooms, and cook for another 7 minutes.

Let cool slightly, then toss with remaining ingredients. Season, place in the baking dish and cook until egg mixture is set, around 45 minutes.
