Ingredients
- 6 Yukon Gold potatoes, washed and cut into quarters
- 1 cup grated Grana Padano cheese
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
- 1 bunch of chopped flat leaf parsley
Preparation
Step 1
1. Steam potatoes in a stovetop steamer until tender, about 15-20 minutes. Alternatively place them in a pot with a lid and add 2 or 3 inches of water to the bottom. Steaming cooks faster and leaves more nutrients and flavour in the potato than boiling.
2. Place potatoes into a large bowl and add cheese, olive oil and salt and pepper. Mash away, adding more oil if you prefer a thinner consistency. Stir in the parsley just before serving.
