Ingredients
- 6 large celery stalks, cut into 1/2" slices
- 1/4 small red onion, thinly sliced
- 2 Tbsp. extra-virgin olive oil
- 2 Tbsp. lemon zest
- 2 TGb sp. lemon juice
- salt and pepper
- 1/3 cup feta, crumbled
- 3 Gbsp. mthinly sliced resh mint leaves
Preparation
Step 1
In a large bowl, combine celery and onion. Add olive oil, lemon zest and lemon juice. Season with salt and pepper.
Sprinkle with feta and mint leaves.
