CHOCOLATE TRUFFLES

  • 16 OZ GOOD QUALITY CHOCOLATE
  • 3/4 C HEAVY CREAM
  • 1/2 LB BUTTER
  • FLAVORED LIQUEUR (2 T)
  • I USE KAHULA, WHITE CREME DE MENTHE, ORANGE LIQUEUR ETC--
  • COCOA POWDER OR GOOD QUALITY CHOCOLATE FOR COATING OF TRUFFLES

Preparation

Step 1

IN A DOUBLE BOILER MELT CHOCOLATE AND HEAVY CREAM. ONCE MELTED, REMOVE FROM HEAT AND ADD BUTTER. ONCE BUTTER IS INCORPORATED, ADD LIQUEUR OF CHOICE.

POUR INTO A PYREX PAN AND COVER WITH PLASTIC WRAP

CHILL

SCOOP, SHAPE INTO BALLS, AND PLACE ON PARCHMENT LINED SHEET.

USE EITHER COCOA POWDER OR CANDY COATING TO FINISH
