Ingredients
- 1 cup whole wheat flour
- 1/2 cup wheat bran
- 1/2 cup flax seed
- 1/4 cup Splenda
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. ground ginger
- 1 cup buttermilk
- 1 Omega-3 egg, lightly beaten
- 1/4 cup canola oil
- 1 tsp. vanilla
- 1 1/2 cup finely grated carrots
- 1/2 cup raisins

Preheat oven to 375F. Line a 12-cup muffin tin with paper cups. In large bowl, combine flour, bran, flax seed, Splenda, baking powder, baking soda, cinnamon, ginger and salt. In small bowl, whisk together buttermilk, egg, oil and vanilla. Stir in carrots and raisins until just combined. Divide batter among muffin cups. Bake 22-25 mins.
