This is the best recipe for cheese tarts that I have eaten. You can't eat just one. They are so good just plain but make a great presentation with a topping.

  • Cream cheese—two 8oz pkg, (Room temperature)
  • Sugar—3/4 cup
  • Egg yolks -3
  • Egg whites 3
  • Butter or margarine
  • Graham cracker crumbs
  • Cherry pie filling—1 can (can use blueberry, strawberry etc.)
  • 1/2 can 1/2 can is enough for one -3 pan recipe
  • Note: check alternative topping for ingredients

Preparation

Step 1

Preheat oven to 350°.

Butter (well) 3 miniature tart pans. Bottom and sides.
Sprinkle graham cracker crumbs on bottom and sides.
Note: Don't use too many crumbs. Takes only a light dusting

Cream together: 2- 8oz-pkg. cream cheese, 3/4 cup sugar and 3 egg yolks

Beat egg whites till stiff (forms a peak and doesn't look wet)
(Use a non-plastic bowl.)

Fold egg whites into cream cheese mixture.
Spoon into tart pans).. (Do not over fill!)
Leave room for expanding. About ¾ full.

Bake 15 minutes. Will not look done. Center will fall after taking from oven.
Cool in pans about 15 minutes.
Remove carefully.
Add fruit after completely cool or serve plain. Delicious!

Alternative toppings:
Blend 2 1/2T sugar and 1 cup sour cream. Spoon into center. Return to oven and bake an additional 5 minutes at 400°

Semi sweet choc. chips-melted with butter
(6oz chips to 1/4 cup butter ratio)
