Ingredients
- for Dressing:
- 2 cloves garlic crushed and pressed
- 1/2 t ea of salt and fresh ground pepper
- 1 T fresh Lemon Juice
- 1 Coddled egg (1min)
- 1/3 C EVOO
- 6 oil packed anchovy fillets
- for Salad:
- 1 lrg head Romaine Lettuce
- Fresh parmesean/romano cheese grated
- Croutons (homemade = best)
- fresh ground pepper
Preparation
Step 1
Dressing
In a glass bowl:
mix garlic, S & P, anchovies and lemon juice.
crush and mix well with fork until blended.
Add coddled egg and olive oil
With hand whisk, Whisk well until emulsified...and smooth
Salad:
Tear Romaine into bite sized pieces,
toss with pepper, cheese and croutons
add 1 large spoonful of dressing and toss well.
adjust dressing amount to taste, but don't make the salad "wet"
