Turkey Brine

Ingredients

  • 1 gallon water (16 Cups)
  • 1 C salt
  • 1 C sugar
  • 1/2 herb packet (Thyme, Sage, and Rosemary)
  • 4 cloves garlic
  • 1 orange - quartered
  • 2 lemons - quartered
  • 1 lime - quartered
  • 1/2 bag fresh cranberries

Preparation

Step 1

Dissolve salt and sugar in 4 cups of water and all ingredients on stove. Let cool and add remaining water to mixture. Remove gizzards and neck of turkey, clean thouroughly inside and out. Place turkey in bucket or crisper drawer breast side down. Add brine mixture, make sure it gets into cavity, and let set 1-2 days. Remove turkey and wash thouroughly inside and out. pat dry well or let dry in refrigerator overnight.

Stuff inside of turkey with:
1/2 herb packet
1 orange - quartered
2 lemons - quartered
1 lime - quartered
1/2 bag fresh cranberries

Separate skin from meat and rub butter, seasoned with lemon, lime and orange zest and herbs.
