Ingredients
- Garnish:
- Vegetable cooking spray
- 1/3 C sliced green onions
- 4 C chicken broth
- 2 C cooked rice
- 1 can (10 1/2 oz.) diced tomatoes with green chiles, undrained
- 1 C cooked chicken breast, cubed
- 1 Can (4 oz.) chopped green chiles, undrained
- 1 T lime juice
- salt to taste
- Tortilla chips
- 1/2 C chopped tomato; 1/2 avocado, cubed; lime slice; cubed Monterey Jack cheese, cilantro
Preparation
Step 1
Heat dutch oven, coated with cooking spray. Add onions, cook and stir until tender. Add broth, rice, tomatoes, and juice, chicken and chiles. Reduce heat to low, cover and simmer 20 minutes.
Stir in lime juice and salt.
Just before serving, pour soup into bowls, top with tortilla chips. Place other garnish in individual serving dishes, so everyone can choose their own toppings.
